Maple Apples & Sweet Potato

One of the simplest side dishes that you can put together as fast as it takes to slice up the squash and apples!

I give warning, I am about to take a small trip down memory lane… but I’m sure we all can appreciate giving credit when credit is due!

This recipe was handed to me from a dear elderly couple that would visit the sandwich shop I worked at through high school. They would come in together on the same day every week, and they would share a sandwich, and complete their word or sudoku puzzles. We were their social event of the week, and over time, Cathy shared some of her favourite recipes that she would cook for her family!

The simplicity of this dish will of course be heightened by the quality of your ingredients. So take care in selecting the nutrition and budget friendly options that are right for your family! Another option that I have used quite often, is to substitute the sweet potato with butternut squash!

RECIPE

Ingredients
* 4 Gala Apples
* 4 sm-med sized Sweet potatoes
* 2 tbsp. Maple Syrup
* 1/4 cup packed Brown sugar
* Cooking oil (avocado)

Directions
* Preheat oven to 350F
* Coat baking dish with oil
* Wash apples and sweet potatoes, and cut into 1/2 inch thick slices. (Peeling potatoes and/or apples is a personal preference)

* Layer in baking dish.
*Combine the brown sugar and syrup in a separate bowl, and pour the mixture over top the apples and sweet potatoes.
*Cover and bake at 350F for 20 minutes. Uncover and bake an additional 20 minutes.
* Carefully check doneness of the sweet potatoes.
