
Vegetables often get a bad rap, evoking memories of awkward high school dances—standing nervously, unsure how to approach them. Let’s break the ice! It’s time to stroll confidently into the produce aisle, pick just one vegetable, and give it a delicious spin!
Many people say, “Vegetables are tricky,” or “I just don’t know what to do with them!” Here’s a simple solution: instead of overwhelming yourself with bags of vegetables that inevitably end up wilted at the bottom of your fridge, pick just one vegetable per family member. You choose one, your partner chooses another, and let your child pick their favorite too.
See? That wasn’t too intimidating! Now comes the fun part—eating them. The possibilities are endless:
Green Peas: Toss them directly into your rice cooker for an easy nutrient boost.
Broccoli: Microwave frozen broccoli, then toss with a delicious sesame dressing and lightly grill it. (Try Kewpie’s Creamy Deep Roasted Sesame Dressing—perfect for dairy-free diets!)
Cucumbers: Slice them up for a refreshing snack with hummus, or dice them into your evening salad.
Baby Peppers: These colorful little veggies are delightful when grilled whole on the BBQ.


Asparagus: A quick stir-fry with shrimp or chicken makes a vibrant, satisfying meal. It’s been my favorite recipe since discovering Company’s Coming stir fry recipes when I was 16!
Green Beans: If you find green beans tricky, try wrapping small bundles in prosciutto and baking until crispy, or sauté them quickly with a Thai-inspired sauce.
Cauliflower: Simply roasting it on a sheet pan with olive oil and spices creates a versatile and delicious side. Or keep it raw and dip in hummus!
The key is to keep things simple, delicious, and fun. With just one vegetable at a time, you’ll soon find yourself confidently strolling through the produce section—no awkward dances needed!
